Have you ever heard of a cruffin? Kate Nycz of North South Baking Co. has created a following for these croissants baked in muffin tins, with a rotating selection of flavors like lemon curd and raspberry almond. Along with the delicious cruffins, North South offers a wide range of bread, savory and sweet pastries, and more. 

North South has grown tremendously since its founding in March of 2018, just over 3 years ago. Farmers’ markets have been a game-changer for the bakery in the past year and some of their best sales happen on Saturday mornings at the Covington Farmers’ Market. Kate emphasized believes that many people have become more conscious of their food intake in the past year or so since spending more time at home and that this has directly translated into an increased turnout at markets.

North South’s unique pastries and bread are created with the highest quality local ingredients, from greens from Roothouse Aquaponics to honey from Beelicious. Kate uses flour and grains from Janie’s Mill in Ashkum, Illinois; while not hyper-local, the flour mill provides the best products possible by using organic ingredients, many grown through their own farm, and regenerative practices. 

Many bakers first find their passion within the more decorative parts of the process, like frosting cakes and decorating cookies, but to Kate, the true love is in the earlier stages. She allows her small batches of dough to ferment naturally for two days, allowing the organic grains to reach their full potential. Combining these practices with local produce allows North South to offer delicious baked goods that are handmade with love and creativity. Because of this dedication to local and ethically sourcing and labor-intensive baking, Slow Food Cincinnati is honored to award North South Baking Co. with a Snail of Approval. As their website says, “there's a unique sweetness within farm fresh fruit that hasn't been trekked across the country before hitting your plate in that slice of pie.” We couldn’t put it better ourselves. 

Find North South at farmers’ markets around the Cincinnati area: on Thursdays evenings at the Madeira market and Saturday mornings at the Covington and Montgomery markets. You can also pre-order baked goods for Thursday evening pick-up at the Incubator Collective in Newport; or find treats around town-- in Northern Kentucky, at Second Sight Coffee and Spirits, Ludlow Tavern, and Tuba Baking Co., as well as in Cincinnati at Homemaker’s Bar and The Fix Coffeehouse and bar, and Chloe’s Eatery in North Bend.
