The name says it all! At Local 127, Chef Steven Geddes uses meats from the region and seasonal vegetables to craft dishes that are as beautiful as they are delicious. Chef Geddes left towers of wine in Las Vegas to be closer to the productive land of the Ohio Valley food shed. Now that he is in the land of plenty, he is going, well, hog wild on the larder of our land. Chef Geddes has forged close connections to wide range of Ohio Valley producers and procurers, including Findlay Market vendors (where spice master Col. De Stewart provides every herb and spice for Local 127), local farms such as Napoleon Ridge (Geddes makes his ketchup from their tomatoes), and the esteemed ham producers at Woodlands Pork. Geddes’ work with pasture raised pork is particularly notable; he and his staff work with whole hogs from heritage breeds, and practice the all-too-often lost art of tail-to-head cooking that pays full respect to the animal and farmer. Chef Geddes and his staff at Local 127 truly understand the concept of good, clean and fair food.
